Quick and easy, this is another go-to recipe for an improvised dinner, as you can easily keep the ingredients in the cupboard all the time. I even used it for Christmas Eve once, as it is quite nice.
Ingredients:
250 gr cooked lentils, well drained
250gr tuna chunks, well drained
1 egg
300 gr cooked mashed potatoes
2 heaped Tbsp fresh chopped parsley
3 chopped spring onions
30gr grated parmesan
1/2 ground white pepper
1 pinch of fine salt
Method:
Put in the mixer the lentils, tuna, parsley, potatoes, spring onions, egg, pepper and the pinch of salt and blizz to get a thick paste
Pour the mix onto some baking paper, and using the paper and your hands shape it into a biggish cilinder
Brush a loaf baking tin with olive oil, then coat it with dry breadcrumbs, shaking off the excess
Transfer the mix into the tin, then dust it with the parmesan and breadcrumbs
Let it rest in the fridge for 1 hour (or a full day)
Bake it in a pre-heated oven at 180 degrees C (fan) for 20 mins or until it gets a nice golden crust (but don't leave it for too long, as it would dry out)
Serve sliced with sweet chili sauce on the side or mayonnnaise and a fresh salad
