Super quick and easy, ready in 20 mins including cooking time! Your guests will never have enough of them, weather they're for starters or just drinking companions ;-)

Ingredients:
1 roll of ready made puff pastry
300 gr tomato passata (you can get a tin can of chopped tomatoes and let it reduce on the hob until it's thickened enough)
1 teaspoon oregano (or fresh basil)
2 cloves of garlic, diced
A slug of olive oil
200 gr mozzarella if using
1 egg
Fine salt
Freshly ground black pepper
Method:
Stir fry the garlic in the oil
Add the passata or tomato tins, the origano, the salt and pepper
Simmer for 15-20 mins in a half covered pot, set aside and let it reach room temperature
Cut the mozzarella in half, then in slices
Cut the puff pastry in circles, lightly punch them with a fork and brush them with the beaten egg
TIP: do not skip the step of punching the pastry with the fork, as if you don't do it, it will swell up and the top will slide out during cooking
Put the tomato passata in the center of the circles, leaving it clean at the edges

Top them up with the mozzarella slices (not too much of it - note that in the picture below I used too much of it and during cooking it went all over the place, so use less!)
Sprinkle with some more origano if you like it, but it's not necessary as you've used it in the sauce

Cook in a preheated oven at 200 degrees C for 14-15 mins, until the pizzas are golden but not dark brown at all (like in this post's picture, ooops!)
