Amazingly satisfying winter first course. This is my way of using left over potato mash. it's super quick to make, and we've been given this as kids very often, and yeah, it does work!
Ingredients (serves 2):
2 brown onions, chopped
40gr butter
900ml vegetable broth (or here you can cheat, and use Knorr cubes, veg and chicken both)
100ml fresh cream (or soy cream) for colour (optional)
1 Knorr vegetable coup-a-soup (made with 270ml of water). Don't shudder, it does work!
700gr left over potato mash (which I usually make with butter and cream)
1/2 tsp nutmeg
1 tsp paprika (you can use smoked paprika as well)
2 bay leaves
1-2 grissini to crumble
1 tsp chopped parsley
Method:
Melt the butter in a heavy based pot, then add the onions and stir-fry them (or stew them under the lid) until translucent and soft
Add the spices and mix well
Add the potato mash and mix well
Add the bay leaves, the broth, the Knorr soup, and the cream if using
Reduce to a simmer, cover and let it cook for 15 mins, stirring every now and then
Remove the bay leaves (!)
Use an immersion mixer if doing it while it's hot, and blizz it all with a cream
Crumble the grissini and serve sprinkled with grissini and parsley
