You really cannot have tea or coffee without biscuits now, can you? Having vegan friends over should of course not stop you! And these are so good, you wouldn't know they're vegan at all!
Ingredients (using my star shapes, this made 9 biscuits):
200gr plain flour + some more for dusting the rolling pin
15gr baking powder
90gr icing sugar + 2 Tbsp for dusting
60gr vegetable oil
60-80gr soy cream (depending on the flour, add it gradually)
2 tsp vanilla essence
2 tsp cinnamon
3-4 Tbs jam (apricot, or peach, or cherry, etc)
Method:
Mix the flour, cinnamon, icing sugar and baking powder
Add the vegetable oil and the vanilla essence until all combined (it'll resemble a crumble)
Add the soy cream carefully, you might not need to add it all: your dough should be elastic and velvety, not sticky - or use more cream if needed
Roll the dough onto some baking paper until quite thin, then cut out your biscuits in any shape using your cookie cutter
Using any kind of tool that works, cut out a small hole from the center of half of your biscuits
Place your biscuits onto a tray lined with baking paper
Bake in a pre-heated oven at 180 degrees C (fan) for 10 mins or less - watch they don't burn
Remove from the oven (test they're cooked by inserting a wooden skewer in the center of one of them: it should come out clean and dry)
Once they're at room temperature, spread the jam onto half of the biscuits (the full ones)
Dust the other half of the biscuits (the ones with the holes) with icing sugar
Place the dusted biscuits over the ones with the jam, then serve
TIP: These keep well in a tin for up to 4 days
