Just a different way of serving salmon, super quick to make. Can be prepared a couple of hours in advance (it's actually better that way) and cook right before serving.
Ingredients:
140gr salmon fillets per person (no skin, no bones) will give you 2 burgers per person
1 tsp Wholegrain mustard per person
1 Tbsp chopped chives, or scallions, or 1/2 a finely chopped small onion per person
1/2 fresh red chili per person (deseeded and finely chopped) or 1/2 tsp of crushed pink pepper
1/2 of a beaten egg per person
2 Tbsp pangrattato (dried, fine breadcrumbs) per person
2 gr fine white salt per person
1-2 slugs of vegetable oil for cooking
Optional - to serve with:
2 Tbsp light shop bought mayonnaise per person
1/2 clove of garlic per person
Method:
Crush the garlic and mix it with the mayonnaise, then cover it and store in the fridge until serving
Chop the salmon really fine with a big chef knife (but do not use a food processor)
Put all the other ingredients in a big bowl, then add the salmon and mix well
Keep a little more breadcrumbs at the ready, just in case the mix is not firm enough
You can use now a burger press, but I prefer to use a cookie cutter as they're smaller and I can obtain burgers a little thicker (0.5-8cm): make a shape just bigger than your cookie cutter and with the desired thickness, and press it firmly to keep it compact, then cut out the shape removing the excess all around
Cover with clingfilm and store them in the fridge until ready to cook (minimum of 2 hours and up to 1 day if the salmon was really fresh)
Heat up a non-stick pan with the vegetable oil, then fry the burgers for 2 mins on the each side
Serve with the garlic mayonnaise, chips and salad
