This is Balkan street food, also widely available in north Croatia, where I got familiar with it. It is absolutely delicious and very simple. Although it's grilled minced meat, it's absolutely not tasting like a burger, and you won't need any sauce with it, although in the Balkans they serve them with the Ajvar sauce.
Ingredients:
500gr minced beef - it is vital it's at least 15% fat, 20% would be better
700gr minced pork
TIP: Sometimes an equal amount of minced lamb is also used, together with the above - if you do use it, increase the amount of spices accordingly
2 medium size brown onions
5 cloves of garlic
2 tsp fine white salt
2 tsp freshly ground black pepper
2 Tbsp smoked paprika
2 Tbsp paprika
1 heaped tsp baking soda
Method:
Finely mince the onions and garlic (I use a food processor)
Mix everything together very, very thoroughly and set it into a glass or plastic bowl
Cover it tight and put it into the fridge to rest for 24 hours - don't skip this!
TIP: You can also make the cevapcici shapes with the mixture, then put those in the fridge (covered) to rest - same difference and handy for when you get to cook them
Shape the cevapcici like a long sausage and flatten them out a little
Take the meat ouf of the fridge 30 mins before cooking - don't skip this!
Heat up to the maximum your griddle pan
Place the cevapcici on the pan, then lower the heat jut a little
Cook them 5 min on each side or longer, it depends how big the diameter is
TIP: Cook one of them and test it - they do need to be well done, not medium rare - then cook the other ones for the same amount of time
