Chocolate Muffins

This is in the notes sections as I haven't taken pictures yet, but it took a good bit to perfect this recipe to give really super moist muffins that I do have to write it down.
Ingredients:
80g flour
45g cocoa powder
125g chocolate chips
80g dark chocolate (52%), roughly chopped
130g demerara sugar
1 tsp baking powder
1 tsp baking soda (bicarbonate of soda)
1/2 tsp salt
80ml vegetable oil
1/2 cup extra oil to brush the cases
2 eggs (room temperature)
200g sour cream
2 tsp vanilla extract
Method:
Baking:
200°C (fan) for 5-6 minutes
Reduce to 170°C (fan) for 20 minutes
Toothpick test - if needed, another 5-6 minutes
Total: ~30-32 minutes
Cool completely in tray
Serve in cases
Yield: 10-12 standard muffins
