Pescatarian Dinner

A full menu here, no pictures nor method instructions, just ingredients for now otherwise I'll forget (p.s. this post sits in my "notes" section still). The menu: seafood ravioli, sollowed by a seafood vegetables salad, and closed by cherry pannacotta.


Seafood Ravioli


Dough:

  • 200gr flour

  • 2 eggs

  • salt


Filling:

  • 100gr prawns

  • 120gr smoked salmon

  • 150gr ricotta

  • the small bit of white of a long scallion (spring onion)

  • pinch nutmeg

  • pinch white ground pepper

  • 50gr dry breadcrumbs (or less) if needed


Sauce:

  • 2 cloves of garlic - crushed

  • the small bit of white of a long scallion (spring onion)

  • parsley stalks

  • 1/2 tsp of dry chili flakes

  • 700gr tomato passata

  • the leftover of the ravioli filling at the end of cooking

  • 2 Tbsp flat parsley


Seafood Green salad:


Marinade

  • Prawns

  • Mussels

  • Calamari rings

  • the small bit of white of a long scallion (spring onion)

  • 1 clove of garlic - crushedd

  • 2 Tbsp flat parsley

  • The juice of 1 lemon

  • Olive oil

  • A pinch of salt

  • A pinch of white pepper


Full Salad:

  • Cucumber cut a-la-julienne

  • Grated carrot

  • Halved cherry tomatoes

  • Iceberg lettuce thinly cut

  • Baby spinach leaves thinly cut



Panna Cotta: (5 portions)

  • 500ml fresh cream

  • 4.5 lef of gelatine

  • 2 tsp vanilla estract

  • 40gr icing sugar

  • 1tsp cherry jam per portion

  • A few cherries covered in icing sugar
